As you guys know, I don’t usually make posts like this…but with summer coming to an end, why not savor the last moments with a fun and tasty dish?! My husband and I made this for dessert the other day and it was the perfect way to cool down on the last of these hot, summer days!
I’ve seen a ton of fruit pizza recipes that call for a sugar cookie crust…this one is a bit of a healthier alternative, and it’s just as yummy! It’s a total guilt-free dessert that’ll hit that sweet tooth! And the best part? It’s SO EASY. Like…you don’t even need to know how to work an oven, kinda easy;) Let’s get started!
Here’s all you need to make it:
- 1 1/2 cup raw cashews
- 1 1/2 cup dried cranberries
- 1 cup greek yogurt
- Assortment of fruit of your choice:)
Start off by pulsing together the cashews and dried cranberries until it forms a dough.
Next, press the dough into a greased pie pan.
Now add the greek yogurt to the top of the crust, just as you would a pie filling.
We used Greek God’s honey vanilla yogurt, but you can use any flavor you like! You can also make this a vegan dish by using a dairy and soy-free coconut yogurt substitute.
And that’s it! It’s THAT easy!! And pretty:)
Refrigerate the leftovers, or save it for breakfast!
